MY French Onion Soup

My French Onion Soup

3 red onions
4-5 sweet onions
3 garlic cloves
Few Tbs butter
3 boxes Pacific Foods broth – use any combination of the following:
Beef
Mushroom
Vegetable
(I like 1 beef, 2 mushroom)
Chardonnay
¼ cup flour
Fresh thyme
Kosher salt
Black pepper


1. Butter into large pot, grated or minced garlic into same pot.
2. Cut onions into chunks about an inch wide each – throw into pot
3. Cook over medium-high heat for 5 or 10 min. I usually add some salt and pepper now.
4. Once onions begin to sauté, turn heat to med-low and slowly stir in flour.
5. Cook over med-low for approx. 20 min, stirring frequently. Add a small splash of chardonnay every few min.
6. After 15min, add fresh thyme.
7. After the 20ish min, add the broth and good amount of chardonnay
8. Bring to a boil, then cover, reduce heat, and simmer an hour or two, stirring occasionally.
9. Taste, add seasonings accordingly.
10. slice bread, throw asiago/swiss/provolone on top of each slice, broil til cheese melts.
11. Ladle soup into bowls, throw bread in each bowl.

**Some beer thrown in while soup is simmering will also add flavor
